• This thesis focuses on the establishment of biocatalytic cascade reactions for the production and detection of industrially relevant flavor and fragrance compounds for food and cosmetic products. To meet the consumer’s demand for those products to be natural, environmentally friendly biocatalytic manufacturing processes that operate GMO-free must be established. Thus, this thesis presents such pathways for the production of an industrially relevant long-chain hydroxy fatty acid and the important flavor and aroma compound raspberry ketone. Furthermore, a biosensor for aldehyde detection was implemented to facilitate screening for suitable biocatalysts that produce industrially relevant aldehydes that are widely applied in the flavor and fragrance industry.
• Diese Doktorarbeit befasst sich mit der Etablierung von biokatalytischen Kaskadenreaktionen zur Produktion und Detektion von industriell relevanten Aroma- und Duftstoffen für Lebensmittel- und Kosmetikprodukte. Um der Nachfrage der Konsumenten nach natürlichen Produkten nachzukommen, müssen umweltfreundliche, biokatalytische Herstellungsprozesse, die ohne genetisch modifizierte Organismen arbeiten, etabliert werden. Daher stellt diese Arbeit solche Wege für die Produktion einer industriell relevanten, langkettigen Hydroxyfettsäure und dem bedeutenden Geschmacks- und Aromastoff Himbeerketon vor. Darüber hinaus wurde ein Biosensor für die Detektion von Aldehyden implementiert, um die Suche nach geeigneten Biokatalysatoren, welche industriell relevante Aldehyde, die häufig in der Geschmacks- und Duftstoffindustrie eingesetzt werden, zu erleichtern.
