The absorption and post-absorptive distribution of the flavonol quercetin has been extensively studied in mammals such as pigs and rats. Scientific research indicates that due to its highly anti-oxidative properties, the flavonol quercetin might ameliorate “oxidative stress” and related processes, like inflammation and the susceptibility for various diseases in humans and animals. In addition, there is a significant amount of evidence that points to a positive influence of quercetin on growth and body composition in terrestrial species. However, concerning those effects of quercetin, there is hardly any information in fishes. For this reason, one aim of the present study was to examine the possible accumulation as well as tissue distribution of quercetin in the carnivorous rainbow trout (Oncorhynchus mykiss) and the omnivorous carp (Cyprinus carpio) after a four-week feeding period. Furthermore, the post-absorptive effect of quercetin in relation to oxidative/anti-oxidative status, as well as its influence on growth performance and body composition was studied in the above mentioned fish species. With respect to the retention of quercetin in both species the results clearly demonstrate, that quercetin is systemically availabel after oral ingestion. However, there was a rapid elimination of quercetin and its metabolites with an intact flavonol structure, thus hindering an accumulation over time in body tissues. Regarding the possible anti-oxidative effect of quercetin, the findings show, that, in the doses administered, quercetin had no significant effect on the parameters of oxidative/anti-oxidative status in both fish species. Furthermore, the results show, that quercetin at least in the doses administered, did not lead to any significant impact on the growth and body composition of trouts or carps.
