  • Die Fruchtreifung stellt einen hochkomplexen Prozess dar, der durch eine Reihe von biochemischen und physiologischen Veränderungen gekennzeichnet ist. The present work reveals new insight into the biosynthesis of 4-hydroxy-2,5-dimethyl-3(2H)-furanone (Furaneol®, HDMF), a key flavour compound of strawberry (Fragaria x ananassa).
